Thursday, Talking About Potatoes

Not much today.

Dunno if I remembered to mention this (and I'm too lazy to look at past posts), Amy and I received two of her grandfather's cast iron skillets. Now, some of you won't think that's all that interesting, but I like to cook, and well seasoned cast iron cookery just plain rocks. So, I'm trying to learn to cook my potato flip in the cast iron, rather than the TFal. It really shouldn't be that much of a problem, cast iron is pretty non-stick when it's well seasoned. The problem I'm having is that the sides are so much steeper, it's harder to get the flip to, well, flip correctly. I seriously goofed yesterday, breaking the thing into three pieces (but not spilling anything, thank-you-very-much), today was slightly more successful, with just a mushed end (it under-rotated). I figure that the next time I try it, it'll over-rotate, that'd be my luck.

For the record, "potato flip" is Amy's name for the meal. It's actually a potato rosti or roesti. We were watching a show on Food TV and saw a chef make the rosti recipe and I thought I'd try it. Generally, I don't use bacon (though it's very yummy with it), and I frequently leave out the mushrooms if I'm eating by myself. It's easy up til the actual flipping of the potato. That part was a little tense at first, until I got the hang of it. Now, I get to get the hang of it again.
